After two months of drying, the grapes undergo a slow and lengthy fermentation process in traditional "caratelli" wood barrels for a minimum of 3 years, resulting in a wine with distinctive notes. The Malvasia Bianca, Trebbiano Toscano, and San Colombano grapes impart a golden hue and aromas of dried fruit and honey, followed by a hint of spice on the finish.
