Billecart-Salmon Brut Rosé Cuvée Elisabeth Salmon, in its own gift box, is the house's rare prestige rosé, created in 1988 to honour the woman whose family gave this Champagne house its name.

The cuvée blends close to equal parts Chardonnay and Pinot Noir, with a small share, generally under ten percent, made as a still red wine from old Pinot Noir vines in Mareuil-sur-Aÿ and blended in for its signature coppery-pink hue. Fermentation happens mostly in small stainless steel tanks with a touch of oak, and the Champagne ages on its lees for roughly a decade before release.

As with the rest of the range, the fruit grows across an organically certified estate, with biodynamic practices on many parcels and no chemical herbicides in vineyards under the family's direct control.

Elisabeth Salmon co-founded this Champagne house in 1818 with husband Nicolas François Billecart, and her brother Louis, an oenologist, shaped its early style. Over 200 years later, still run by her descendants, the house crafts this cuvée as a quiet tribute to her role in Champagne's history.

Tasting notes

Created to honour the House's co-founder, this prestige rose cuvee blends Chardonnay and Pinot Noir, with a small proportion of still red wine from the old-vine Valofroy plot in Mareuil-sur-Ay. A luminous salmon-pink hue leads into aromas of ripe red berries, spice, rosewater and crushed flowers. The palate is refined and complex, layering peach, citrus and pastry notes over a chalky, saline structure, finishing long, delicate and mouthwatering.
