Tasting notes

Brilliant straw gold with fine, delicate mousse. Extraordinarily complex nose of toasted almond, salted hazelnut, and brioche with notes of lemon zest, golden apple, and aniseed. The palate is concentrated and vinous yet remarkably elegant, with flavours of baked apple, citrus, and biscuit, underpinned by a crisp mineral acidity and creamy autolytic depth. Long, saline finish with notes of dried herbs and a chalky mineral persistence.
