Aalto is an expressive release built around layers of red and black fruit, gentle earthy nuance and refined tannins.

The wine is vinified with a controlled, site-first approach, then matured to integrate texture and savoury nuance without obscuring the fruit's character.

Sustainability is approached through responsible viticulture and thoughtful sourcing, favouring healthier vineyards and lower-impact practices so the wine can be made with minimal corrective intervention.

This winery's approach blends regional tradition with modern precision, aiming to translate vineyard character into wines with clarity and personality.

Wine details

15% ABV - 750 ml - Ribera del Duero DO, Castilla y León, Spain

Sustainability

Sustainably farmed estate with no herbicides or chemical fertilisers across 130 hectares, minimal intervention winemaking philosophy by Mariano García, short pruning for quality focus, and environmentally integrated winery architecture harmonising with the Ribera del Duero plateau landscape

Tasting notes

Deep ruby red with violet hues. Bold and concentrated nose of ripe dark plum, blackcurrant, and black cherry with notes of graphite, toasted oak, and subtle floral violet. Rich and mouthfilling on the palate with powerful dark fruit flavours supported by well-integrated tannins from French and American oak ageing. Despite its concentration, the wine maintains excellent balance with good acidity and a chalky mineral framework. Long and complex finish with lingering flavours of dark berry, spice, and elegant oak character.

Serving temperature

Serve at 16-18 °C

Food pairings

Chargrilled ribeye steak, braised lamb shanks, Torta del Casar cheese, wild mushroom and truffle ragout; Asian pairings: Peking duck with plum sauce, Hyderabadi biryani with lamb, Japanese sukiyaki with prime beef, Korean doenjang jjigae with pork
