Billecart-Salmon Clos Saint-Hilaire, in a luxury gift box, is a single-vineyard Champagne from a walled, one-hectare plot of Pinot Noir right behind the family's own house in Mareuil-sur-Aÿ.

Every grape from this parcel, planted in 1964, is vinified entirely in small French oak barrels, with malolactic fermentation blocked to preserve tension and precision. The wine then rests on its lees for an extraordinary fourteen to fifteen years, with just a whisper of dosage at disgorgement, and is bottled only in years the family judges truly exceptional.

This plot is also Billecart-Salmon's proving ground for regenerative farming: horses plough the soil, sheep graze between the rows, and beehives, insect hotels and small ponds line the vineyard walls, part of an organic-plus approach to viticulture.

The plot has a personal history. First planted as a flower and fruit garden by a family matriarch in the 1950s, it was replanted entirely to Pinot Noir in 1964 by her son. Decades of patient tending later, the family began bottling the results as a standalone Champagne, naming it after the nearby Église Saint-Hilaire.

Tasting notes

Sourced from a single one-hectare walled vineyard behind the Maison in Mareuil-sur-Ay, planted exclusively with Pinot Noir since 1964 and vinified entirely in oak casks. This rare Blanc de Noirs offers a golden hue with fine, persistent bubbles and a richly complex nose of spiced orchard fruit, brioche, toasted almond and dried flowers. Full-bodied and structured, with shimmering acidity and chalky minerality, it concludes with remarkable length and precision.
