Billecart-Salmon Le Blanc de Blancs Grand Cru NV, in its own gift box, is a 100% Chardonnay Champagne drawn exclusively from four Grand Cru villages of the Côte des Blancs: Avize, Chouilly, Cramant and Mesnil-sur-Oger.

True to house style, the wine is vinified in small, temperature-controlled stainless steel tanks rather than wood, keeping the Chardonnay's citrus and chalky minerality front and centre. The blend combines two vintages, with reserve wine making up a third to two-fifths of the assemblage, and it rests on its lees for four to five years before disgorgement.

This cuvée comes from an estate farming over 100 hectares under organic certification, with biodynamic practices extended to many parcels alongside the house's growers.

Billecart-Salmon has stayed in one family's hands since its 1818 founding by Nicolas François Billecart and Elisabeth Salmon, and today, under seventh-generation head Mathieu Roland-Billecart, the house still leans on these same Grand Cru slopes for the clarity this Blanc de Blancs is known for.

Tasting notes

A 100% Chardonnay cuvee sourced exclusively from the Grand Cru villages of Avize, Chouilly, Cramant and Mesnil-sur-Oger. Luminous gold in colour with fine, lively bubbles, it opens with citrus oil, confit lemon and orchard fruit before revealing a creamy, chalky texture layered with brioche, fresh almond and white flowers. Vinified in stainless steel and aged several years on the lees, it finishes long, saline and precisely mineral, a hallmark of Cote des Blancs terroir.

Serving temperature

Raw oysters, caviar, delicate white fish, marinated sashimi; Asian pairings: sashimi platters, ceviche, steamed sea bass
