Billecart-Salmon Le Réserve NV, in its own gift box, anchors this storied Champagne house's range, built around freshness, precision and a texture that belies its non-vintage status.

The base wine ferments slowly at low temperature in small, parcel-separated stainless steel tanks, a technique the house adopted to protect delicate aromatics, with a small portion also aged in oak. Over half the blend comes from reserve wines drawn from up to fifteen earlier vintages, and the finished Champagne rests on its lees for close to four years before release with a light, extra-brut dosage.

Billecart-Salmon farms over 100 hectares under organic certification, with a growing share managed biodynamically, and has phased out chemical herbicides across the vineyards it controls, supporting healthier soils and biodiversity.

The house began with a marriage in 1818, when Nicolas François Billecart wed Elisabeth Salmon in Mareuil-sur-Aÿ and, with her brother Louis, a passionate winemaker, built something rooted in restraint over power. Now in its seventh generation, it remains one of the few grandes marques still fully family-owned.

Tasting notes

A light, fine and harmonious blend of Pinot Meunier, Chardonnay and Pinot Noir drawn from over twenty top Champagne vineyards. Straw-yellow in the glass with a persistent, gently rising mousse, it offers crunchy red apple, wild strawberry and raspberry fruit layered over gentle brioche, almond and toast from extended lees ageing. A fine line of lemony acidity carries the wine to a long, precise finish, making it an elegant, versatile Champagne for any occasion.
