Bodegas Valdesil Asadoira is a single-vineyard Godello from a schist-soil plot in Córgomo, on the steep slopes of Galicia's Sil valley. The original winery gift carton contains 3 individual 750 ml bottles.

The vines were planted in 1971 on pure slate, and the wine is fermented and matured on its lees in stainless steel, a technique this house helped pioneer, giving it a muscular, mineral edge only bottled in the best years.

The Asadoira plot is farmed with year-round vegetation cover to keep the soil alive and prevent erosion, a conservation-minded approach that runs across the Prada-Gayoso family's vineyards.

Valdesil's story began in 1885, when José Ramón Gayoso planted Galicia's first Godello vines here, a legacy revived by his descendants from 2001 onward and now carried into its fourth generation.

Sustainability

Valdesil's old Godello vine plots in Valdeorras have been cultivated without herbicides for decades; the estate relies on natural cover crops between vine rows to protect soil biology and prevent erosion on the steep granite terraces, preserving the living soil that gives old-vine Godello its distinctive mineral character.

Tasting notes

Pale gold with aromas of white peach, citrus blossom, pear, and the mineral freshness of Galicia's granite soils. From very old, low-yielding vines, the palate is textured and full without losing its defining tension — ripe stone fruit, honeyed citrus, and saline minerality in perfect balance. Long, clean finish. Decant briefly before serving.

Serving temperature

Serve at 10-12 °C

Food pairings

Grilled Atlantic seafood, white fish ceviche, soft goat cheese, light herb pasta; Asian pairings: steamed fish with ginger and scallion, Vietnamese fresh spring rolls, Thai seafood salad, sushi and sashimi
