Tasting notes

A precise and intense zero-dosage Champagne produced only in years of great maturity. The fine, complex bouquet reveals small white peaches, white flowers, slightly roasted almonds, and subtle candied notes. The palate is pure and ample with great structure, balancing freshness and maturity through flavors of gingerbread and fruit marmalade. Six to eight years of lees aging delivers exceptionally fine bubbles and a chalky minerality that carries through a long, bone-dry finish.

Serving temperature

Serve at 6-8 °C

Food pairings

Raw oysters, sashimi-grade fish, ceviche, light seafood; Asian pairings: sashimi platter, steamed fish with soy, Japanese edamame, Korean raw fish bibimbap

Awards & recognition

Rated 93 points by James Suckling - 'Enticing and spicy with cloves, dried heather, ripe apples, and a long, satisfying finish'
