The winemaking process is defined by a gentle, low-intervention approach to preserve the fruit's natural energy; the grapes are hand-harvested and fermented with native yeasts in stainless steel tanks to maintain freshness, followed by a patient aging period in neutral oak barrels that adds subtle texture and depth without masking the wine's vibrant character.

Domaine de la Cadette was founded by Jean Montanet and is now led by his son Valentin, who have been instrumental in the revival of the Vézelay appellation; their story is one of pioneering spirit, having transitioned to organic farming in the late 1990s to prove that this historic region could produce world-class, living wines through dedication and respect for the land.
