Tasting notes

Pale golden colour with fine, persistent streams of tiny bubbles. Complex and elegant nose of green apple, lemon curd, and honey with evolving notes of toasted brioche, hazelnut, and fennel. The palate is beautifully balanced with a delicately creamy mousse, flavours of ripe apple, citrus, and toast, supported by an invigorating minerality. Very long, graceful finish with notes of almond and a tantalising citrus zest lift.
