Tasting notes

Luminous straw gold with a fine, elegant mousse. Intense aromas of ripe golden apple, acacia honey, and white flowers with complex notes of toasted hazelnut and mineral stone. The palate is rich and structured for a sparkling wine, with concentrated flavours of orchard fruits, candied citrus, and almond paste. Remarkably long, creamy finish with saline minerality and persistent floral lift.

Lobster tail with drawn butter, pan-seared sea bass with fennel, risotto ai frutti di mare, soft-ripened Taleggio cheese, almond biscotti with mascarpone
